I love Fall, it has to be my favorite time of year. The time when the air starts to get a bit of a crisp feeling to it and where sweaters and jeans is the outfit of choice. It is also the time when the classic flavors start coming out once again, spice, pumpkin, and of course, carmel apples! I have never grown out of my love for carmel apples and I only eat them during the Fall season, maybe that is why I still desire them so much. This season I decided to put my carmel apple obsession into a cupcake. I didn't want this to be just any carmel apple cupcake. I didn't want any type of buttercream or cream cheese frosting because I wanted this to be as much like a carmel apple as possible and how can you have that without all that gooey nummy carmel.
So, the picture I have posted is an apple and cinnamon cupcake made with fresh juicy apples and topped with melted carmel, the same as you would use on a carmel apple. It has been awhile but here we go
So summer comes and summer is about to go and I know that I have been slacking on our blog. We have been very busy this summer with all sorts of activities and that includes baking cupcakes. Here is a little of what we have done this past little while.
Strawberry Colada Cupcake
One of my most favorite drinks is a Pina Colada. But what makes it even better is adding strawberry to it and making it into a cupcake! This is a coconut cupcake made with coconut milk, coconut, and fresh strawberries. It is then topped with a fresh strawberry buttercream with coconut milk and garnished with toasted coconut. This is the perfect treat to join you at the pool!

I have always loved the store Tiffany's and it is my dream to one day visit Tiffany's New York. Until then I will have to settle with making what I call Tiffany Cupcakes and wearing my favorite and only necklace from Tiffany's, a present from my husband the first year we were married. This is a vanilla bean cupcake with a rich, smooth, cream cheese frosting and topped with silver and white sugar balls.
Welcome Baby Boy!
Nothing says congratulations like a cupcake, especially when it is decorated for the occasion. I took dinner, along with dessert, to a gal in my neighborhood after she had her second little boy. These are the same as the Tiffany cupcakes but they are topped with decorative chocolates.
Peach Bourbon
I decided to try something different and new. I love peaches and anything made with peaches and I thought the two flavors would complement each very well. The cupcake is made with peach puree and little chunks of fresh peaches with of course some bourbon. The frosting is made with fresh peach puree and a little more bourbon. The taste of these are very strong and you can definitely taste both the peaches and the bourbon. If you are looking for a little bit of kick in your cupcake then these are a must try.
A Formal Occasion
We finally got our shot at a wedding. We made the classic white cupcake with a smooth, creamy vanilla and almond buttercream. We even tried our luck at fondant decorations and made small flowers that matched the brides colors which were turquoise and burnt orange.
The reception was held in downtown Salt Lake and Teri and I went there to set up. The set up went pretty well with a few minor adjustments and we held our breath as the bride walked in. I can happily say that she was thrilled with her cake and said it turned out exactly how she wanted it!
Here is the cake after all of the set up was done. For our first wedding cupcake cake I think we did a pretty great job. Each time I know we will get better and better!
These cupcakes are a sour cream chocolate cupcake with a cream cheese frosting and sprinkled with cocoa powder and topped with a fondant decoration. I made these for a lesson I had to give on developing your talents. I consider cupcake making a talent that I have developed. It has taken a lot of time and a lot of practice to have come as far as I have. This is something I have a passion for and love doing!
These are my latest cupcakes, Mimosa, but instead of champaign I used ginergale. These are one of my favorite because I love orange in any cupcake and I used fresh orange juice and orange zest. I got great feedback from these!

Gotta Love Oreos!!!
I love making new and different kind of cupcakes. Sure there are the classic chocolate, vanilla, etc. but I want to make cupcakes that are made from some of my favorite foods, hence the Oreo! I don't have too many pictures of this cupcake because I didn't have my camera when I was done baking them so as soon as my sister decides to send me the pictures I took off her camera I will have more to share.
My favorite part of this cupcake is that it is baked with half of an Oreo on the bottom, it serves as short of a crust. I then mixed crushed Oreos into the chocolate batter, baked them, and then topped each cupcake with a delicious Oreo Cream Cheese Frosting! I can't get enough of cream cheese and don't think I ever will.
You might say that the best part of an Oreo is dunking it in milk, well I say what is better then that is dunking an Oreo Cupcake in Milk!!!

Party Time!!!
So my little girl turned 4 last Saturday and this year instead of going and buying her an expense cake, which most of it would go to waste, I decided to make her cupcakes. Now, everyone knows that you can't have a birthday party without party hats. Therefore, what a great idea to make party hat cupcakes. These were pretty simple to make and it is a basic chocolate cake with a cream cheese frosting. The hat is a sugar cone dipped in candymelts. This turned out much better then I expected because in the past I have never been too successful with melted candy.
I will have to admit that when it came to decorating the "hats" I did have a little help. This is only because I was trying to finish these, prepare for a BBQ and do about 30 other things all at the same time. Thanks to my friends and their help these cupcakes turned out really cute and they were a hit with the kids and the adults!
So next time you are having a birthday party for a kid or an adult, don't forget to pick up your own "party hat cupcakes."

Small's Small Cupcakes
For as far as I can remember my family has called me "Small." I can remember my brother calling me Small first and soon everyone in my family was. This is my nickname because for some reason all my siblings got the tall genes and by the time I was born I guess they were all used up. I don't think I am that short, 5'4 I feel is the perfect height.
Seeing as my family likes to call me "Small" I decided to make some small cupcakes and name them after myself. From now on any mini cupcake I bake will be called Small Cupcakes.
This is the first time I have attempted to bake small cupcakes and besides making sure not to overfill the baking cups with batter, they turned out pretty good. This time around I went with a vanilla bean cupcake with a carmel filling, peanut butter cream cheese frosting and a chocolate chip to garnish. I loved the vanilla bean in this cupcake and you could really taste all the flavors.
The nut cups were perfect to bake my small cupcakes in. Sad that it took us until the next day to figure out the easy way to pull the paper off, turns out it is possible without biting it or having to use scissors.
Because these are small cupcakes I tend to eat more because it is like a tiny cupcake shot. One bite and it is gone, leaving you wanting more.

Hungry? Grab a Cupcake!!!
So my friend sent me a picture one day of a candy bar cupcake and right then I knew that was the next cupcake I was going to make. Now, I love to make chocolate cupcakes, mainly because one of my most favorite things in life is chocolate. Therefore, anything I can bake that involves chocolate I am all over!
Each chocolate cupcake I bake I use a different recipe. Some of you might think a chocolate cupcake is just that I have found that no chocolate cupcake has tasted the same and each time gets better and better.
This Cupcake is the first one I have made that has a filling in it. I got to use my new fun tool that takes a small portion of cake out of each center of the cupcakes. I filled each cupcake with small pieces of caramel nougat candy bars mixed with a sweet nummy caramel. The frosting is a buttercream caramel and then drizzled with caramel and little bits of snickers.
When you are craving a treat, this is by far the perfect treat for you!!!
An Island Treat-Banana Foster
I made these a few weeks ago and have not had the chance to post until now.
So these are owey gooey and oh so nummy! What better treat then whipped cream, bananas, coconut, caramel and lets not forget the rum! I was a bit nervous when I decided to bake these particular cupcakes because they were something totally new for me. However, I will have to admit that it was kind of fun going to the liquor store but I know I looked like a nerd because it took me forever to decide on what rum to buy. Not only that, I was a little offended they didn't check my ID.
The batter itself was good but when I added the rum it went from good to amazing!! For the whipped cream topping I decided to try my own thing and made a whipped cream frosting with fresh bananas and a few added extras. This is still a work in progress because the frosting was really good but didn't have the consistency I wanted for piping. This just gives me a challenge and a goal to work for.
I don't consider these the best looking cupcakes I have made but sometimes it is all about taste and not looks. Keep checking back because I will make these again and repost.

Tis the Season, for Strawberries that is!!!
I know summer is coming when the birds outside my window start waking me up at 4:30am, when all the neighborhood kids are playing in my backyard, and when I am able to eat fresh, sweet strawberries again. What is even better? Strawberry shortcake! So, I thought, what better way to satisfy my cravings then in one of our delicious cupcakes.
These self indulging cupcakes have fresh strawberries in both the cake and the frosting. I only made one tiny mistake, which I corrected right away, and that was I got so excited that I ended up pouring the fresh strawberry puree in the frosting mixture way to early, resulting in having to throw it out and start over. However, as many of us know practice makes perfect. If you are like me and love strawberry shortcake then you will love love love this Strawberry Shortcake Cupcake!

Peanut Butter Anyone???
I don't know about you but there is nothing in this world better than peanut butter. No matter how old you get, peanut butter will always be a favorite with everyone. These cupcakes aren't just peanut butter they are Peanut Better!!! This is a chocolate peanut butter cupcake with a peanut better cream cheese frosting. If that doesn't sound delicious enough, we have topped them with shavings of milk chocolate and a miniature peanut butter cup.

Lemon Delight
Hi All, it's Teri, the sister! It's my first blog and I am delighted to show my Lemon Delight cupcakes. They turned out better than I thought they would. They are a very light and refreshing cupcake that will bring a bit of summer into the very rainy, dreary days that we have been having lately.
This is a lemon cupcake with a lemon cream cheese frosting and to top it I put a lemon chocolate on top. Now you might think, "Wow, that is a lot of lemon!" But the way I worked the recipe it came out with just the right amount of zest! If you aren't a fan of lemon you will be after you try these, they are mmm...Nummy!

I'd Like S'more Please!
So the weather finally turned warm, for one day, and then today we had a warm rain shower. Weather like this just reminds me of camping and I am getting so excited to go. When we camp, one of my favorite things to do is sit by the fire, roast marshmallows and make S'mores. Well, since I couldn't go camping this weekend why not make S'mores but make them a little extra special, that is when I decided to make a S'more cupcake.
For one, I was excited to go buy a new toy, a torch. I knew I had to be careful with the torch because in the past I have started an oven fire just by trying to toast coconut.
Once my supplies were bought I went to work. For one this gave me an excuse not to work on my lesson for tomorrow, and two it gave me yet again another cupcake challenge.
I started off by making a graham cracker crust, this just proved to me how much I love my new blender, it can do anything! Then to the crust I added a little chocolate and some mini marshmallows. I topped those off with the chocolate batter, and then made my marshmallow frosting. I have said before that I claim to be no baking expert and today proved it when I almost put tarter sauce instead of cream of tarter in my frosting. The only reason why I caught this is because I started thinking, "now why would you put a fish dressing in a cupcake frosting"? Yes, if you have not guessed, I am a blonde. I soon panicked and quickly called my neighbor who came to my rescue once again and let me borrow some of her cream of tarter.
The end result, some pretty gosh dang good cupcakes. These will leave you wanting S'more. They are what we call mmm...nummy!!

Orange Creamsicle Cupcakes
This is my latest creation. I absolutely love orange creamsicle popsicles so why not try it as a cupcake. These cupcakes turned out better then I thought. As a rule I allow myself to eat only one cupcake that I bake and then I give the rest away. However, I have to admit, I ate way more than one. Some of my husbands co-workers got a little irritated because the next day I only sent 4 of these tasteful treats to his work and there was not enough to go around.
If you are a fan of fresh orange juice and orange zest then these are a must try!
